I'm about to publish a website to promote a product, and start an Adwords campaign, but I planned on having only a single page promoting the product. How important is it, or is it important to have a "Home" page, a "Privacy Policy" page, etc. Does Google really require that stuff?

I have had my brain buried in learning Adwords lately so maybe some Adwords Pro's can comment too.
Google loves Privacy, Contact, Terms of Service, etc. These give your page some "juice" and validity. It also helps your Quality Score which lowers bid costs. Higher Quality Score = lower bid costs = higher profits!
Another little tip: Your ad copy (keywords) should match your landing page content, especially the headline. Again = higher Quality Score!
